Before we dive into District 7 Wines (our August Winery Spotlight) we are excited to announce we have a NEW WINE OF THE MONTH PROGRAM. We’ve had a Wine of the Month program for awhile now, but we are relaunching. New format + new pricing structure = better deals for you.
Our new Wine of the Month format will have wines featured at $12.98/ea. Similarly to how we always have $6.99/6pks for our Beer of the Month program, our Wine(s) of the Month will always be $12.98! Expect to come into our store and get a killer deal on carefully curated, quality wines that rotate monthly for $12.98/ea.
SO….without further adieu, the first winery we’re featuring for our new and improved Wine of the Month initiative is District 7 Wines.
Vineyard Spotlight – From the Winery:
California has 17 grape crushing districts. Monterey County is number 7. Wine experts recognize our home as one of the most beautiful and diverse wine growing regions in the world. The distinctive geography, climate and soils lead to wines that are complex, elegant and most importantly, delicious. District 7 is Monterey.
Monterey County is a good place to call home. In addition to its stunning scenery, diverse recreation and relaxed lifestyle, it offers a wide range of terroirs to grow both cold- and warm-climate grapes. Incredible properties allow us to produce a range of wines that are true to variety and site. All of our estate vineyards are officially certified by the California Sustainable Winegrowing Alliance(CSWA), a statewide certification program that provides third-party verification of a winery’s commitment to sustainable wine growing practices. Driving our efforts at District 7 is a core belief that the best wines come from vineyards and ecosystems that are in balance. For decades, we have been at the forefront of innovation and applied technology in our vineyards to improve wine quality while reducing water use, shrinking our carbon footprint, and advancing sustainability.
Vineyard Spotlight – From Molly’s Staff:
We are in constant search of wines that are varietally correct, balanced, delicious and still fit into our retirement plan. For the Month of August we are excited to offer you District 7 wines as our Wines of the Month. We have long been fans of the way that the Monterey Bay regulates temperatures in District 7. Morning fog, sunny afternoons and cool nights set up excellent ripeness and freshness as grapes develop in the vineyard.
District 7 Sauvignon Blanc sports a nice bright tropical nose. The palate finds excellent tension between ripe tropical fruit and citrusy freshness. The finish is clean and crisp. Textbook Monterey style.
District 7 Chardonnay is a traditional California Chard which marries oak influence to ripe orchard fruit components. The nose abounds with vanilla and baked apple pie while the palate is rich with flavors of ripe apples, pears and citrus fruit. The wine finishes clean and tempting you to take another sip.
District 7 Pinot Noir offers the balance and elegance that we look for in Pinot Noir. The aromas and flavors are a montage of red & black cherry, ripe raspberries and a zesty pomegranate component. The cooling effect of the Monterey Bay is important in keeping this wine fresh.
District 7 Cabernet Sauvignon is the bruiser of the line-up, but this big guy can still dance with finesse. Ripe black cherry fruit is intertwined with subtle oak components resulting in silky, substantive and complete offering of fruit, mocha and vanilla.

Molly’s Spirits and Aspen Brewing Company Release Molly’s Sip of Colorado – Your New Beer of Summer
Six-packs will ring in at just $5.99 – making it the perfect affordable complement to the season
Molly’s Spirits and Aspen Brewing Company have released Molly’s Sip of Colorado, a collaboration beer that is available NOW at Molly’s Spirits. This is the third collaboration beer from Molly’s Spirits this year, following I Can’t Believe It’s Butter, created for the 2018 Collaboration Fest, and Better Together – both with New Image Brewing.
“We were excited to re-enter the Denver market with a collaboration with an iconic Colorado brand that is well known and respected in its community,” said Aspen Brewing CEO Peter Bassett. “Molly’s and Aspen Brewing Company have prioritized the outdoors and Colorado lifestyle as key components of their brands. Molly’s Sip of Colorado, which draws inspiration from traditional Colorado flavors while providing an extremely affordably priced Colorado craft beer perfect for weekend warriors, demonstrates that love and admiration.”
The beer is a spin on the California Common beer, also called a steam beer, using similar brewing techniques with a high-altitude spin. Molly’s Sip of Colorado celebrates the beauty of Colorado from grain to glass. At 4.56 percent ABV, this crisp and refreshing beer has a subtle and sweet malt backbone that is complemented by notes of floral, pine and mountain fruit from the combination of Palisade and Chinook hops.
The team at Molly’s arrived at $5.99 price point for six-packs to provide the marketplace with a value-driven option for craft beer.
“We want Molly’s Sip of Colorado to be a go-to choice for Denver imbibers to enjoy while hanging out on all the best rooftop patios, lakes and 14ers this summer,” said Jaylee Adams, marketing manager at Molly’s Spirits. “It’s sessionable and affordable enough that it’s a superb choice for any Colorado occasion.”
Molly’s Sip of Colorado will be available in six-pack cans at Molly’s Spirits beginning on June 11. Stay tuned for more details about a Denver release party following the store launch.

Three cheers to 2017! If you’re like us you’re preparing and planning your New Years Eve celebrations. In true Denver fashion, between concerts, 4-course dinners and pop-up events, there are about a million ways to spend your night. Whatever you’re planning, no NYE celebration is complete without some bubbles. This holiday above all others warrants cracking out something good to drink, because let’s face it….2017 was a wild year and we all need a drink! This is the perfect evening to impress your house guests or party host with a badass bottle of Champagne.
With that being said, we have curated a list of our top 10 favorite champagnes for your New Years Eve celebrations! We focused this list on a few beloved Grower producers, which are Champagnes that are produced by the same estate that owns the vineyards from which the grapes come… basically as “craft” as the Old World of wine gets! We’ve also listed a few well-known Negociant producers. All of these Champagnes would elevate your NYE festivities. #SaveWaterDrinkChampagne
“The Brut Réserve, a blend of 70% wines from the base year (2013) with the balance reserve wines, composed from approximately one-third each of the three major varieties (Chardonnay, Pinot Noir & Pinot Meunier). A model of harmony, nuance and verve, it is a pure expression of the domain’s varied terroirs that demonstrates both the Bérêche brothers great skill and their originality.” –The Rare Wine Company
POL ROGER, BRUT RESERVE, NV $45 Negociant Producer
“An elegant Champagne, with a smoky, minerally underpinning and subtle flavors of poached pear, toast, candied lemon zest and ginger riding the finely detailed bead. Harmonious, and hard to stop sipping. Drink now through 2020.” -Wine Spectator
LARMANDIER-BERNIER, LONGITUDE, BLANC DE BLANC, PREMIER CRU, NV $48 Grower Producer
“Perfect as an apéritif, its freshness, its frankness, its mineral quality will give you an appetite. You can drink it now or also keep it for several years.” – Champagne Larmandier-Bernier
GEOFFROY, ROSE DE SAIGNEE, BRUT, PREMIER CRU, 2013 $59 Negociant Producer
“Vibrant acidity frames flavors of steeped white peach, raspberry, candied orange zest and smoke in this rich, expressive rosé. Well-balanced and lively, with a mouthwatering, spiced finish.” –Wine Spectator
MARIE-COURTIN, EFFLORESCENCE, BLANC DE NOIR, EXTRA BRUT, 2013 $62 Grower Producer/Organic
“L’Efflorescence is the most full-bodied of Dominique’s Blanc de Noirs. It doubles down on the natural higher ripeness of Pinot Noir, planted in clay-heavy soils at the foot of a sloping vineyard, by being vinified in second hand barrique for a richer, finely oxidative style. As with other Marie-Courtin wines, only native yeasts are employed and no dosage is added. It sits a burnished golden yellow in the glass with finely beaded mousse. The nose is expressive with touches of brioche, biscuits, hazelnuts, and ripe Jonagold apples. While the palate is full and powered by structure and minerality that only gives hints of brazil nuts, red currants, and mocha before a dry and admirably sustained finish.” – David Salinas
PIERRE GIMONNET, CUVEE FLEURON, BLANC DE BLANC, BRUT, PREMIER CRU, 2008 $63 Grower Producer
“A fabulous tertiary wine from a superb vintage; malt and brioche and balsam, clinging and hedonic and spicy. Just a riot to drink now. Bless him for making it available!” – Terry Theise
GEORGES LAVAL, CUMIERES, BRUT NATURE, PREMIER CRU, 2013 $66 Grower Producer
“High-pitched, mineral-laced citrus fruit and honeysuckle aromas are complicated by notes of iodine, anise and ginger. Racy and precise on entry, then deeper in the mid-palate, offering intense orange pith and chamomile flavors and a touch of bitter quinine. Almost Chablis-like in its focus and mineral cut, finishing with excellent clarity and length. I imagine that this fat-free, lithe Champagne would do wonders with raw shellfish or fresh goats’ milk cheeses.” –International Wine Cellar
“A lovely rosé in an almost vinous style, with mouthwatering acidity and a fine, lacy mousse carrying appealing flavors of ripe raspberry, white cherry fruit, star anise, mandarin orange peel and honeysuckle. Lightly chalky on the lasting finish. Enjoy with food. Drink now through 2020.” –Wine Spectator
CEDRIC BOUCHARD, ROSES DE JEANNE, LIEU DIT PRESLE, BLANC DE NOIR, 2012 $115 Grower Producer
“Ample, creamy and layered, the 2012 possesses exceptional balance from start to finish. Intense red stone fruit, mineral, kirsch, wild flowers, smoke, slate and herbs. All the elements are in the right place.. In a word: magnificent!” –International Wine Cellar
SALON, LE MESNIL, BLANC DE BLANC, BRUT, 1999 $475 Negociant Producer
“Bright yellow-gold. Deeply pitched, pungent aromas of candied lemon, pear skin, anise, buttered toast and smoky lees, with notes of ginger and white flowers adding lift. Densely packed yet vibrant, showing impressive power and clarity to its mineral-accented citrus and orchard fruit flavors. Expands on the finish but maintains its focus, picking up iodine and bitter lime notes that linger impressively.” –International Wine Cellar
________________________________________________________________________________________________________ All Champagne’s come highly recommended by Molly’s Wine Manager, Scott Smith. Scott has coordinated the wine program at a number of retailers and restaurants in the Denver Metro area over the last 15 years. Scott loves Champagne and other Sparkling wines and he will unabashedly brag about 80% of his personal wine purchases going to bubbles. Scott has a particular affinity for Grower Producer Champagne. Growers tend to practice organic viticulture, allow fruit to fully ripen, use indigenous yeasts and be far more deliberate in the winery. Molly’s boasts the most extensive Grower Champagne selection in the State of Colorado and one of the more impressive sets in the Country.

Orin Swift Papillon Red
“An intense ink with a garnet rim, the wine opens with powerful aromatics of cassis, ripe boysenberry, and chaparral with hints of graphite, sage, fire-roasted meats and fresh brioche. The entry floods the palate with ripe dark fruit flavors of blackberry and black cherries as well as fresh minerality and a touch of kir and crème de menthe. With traces of tannin, the wine finishes with a lingering sweet licorice and a smooth acidity. Overall, this vintage of Papillon truly characterizes the theme—bold and massive yet also delicate and complex.” – Orin Swift
