The idea came about as Charles was searching for an entry-level Prosecco to compete locally for the coveted by the glass pour for weekend brunch business in the Colorado restaurant scene. The owners of Il Palagio offered some contacts they had in the Veneto region of Italy, home to Prosecco. After several visits to Italy and dozens of winery tastings, the final blend was made and Col Solivo was created. The style is Extra Dry, so there is a creamy mid-palate to this wine with fine perlage to the bubbles. The wine has some residual sugar, as required for Extra Dry classification, which helps round out some of the citrus fruit and provides balance to the wine. It is a crowd-pleasing, affordable sparkling wine created with the idea of enjoyment and drinkability .” -The Importer Region/Appellation: ProseccoCountry Hierarchy: Veneto, ItalyGrape/Blend: Glera (Prosecco) Mercat Cava Brut Nature, Spain Reg. $16.98 | SALE $12.98 until Tuesday, January 3rd “A wonderful peachy bouquet that blossoms in the glass with hints of dried apricot and honeysuckle. Very much true to the Blanc de Blancs model with a defined minerally streak to its lean, lightly lemony, nicely autolyzed aromas, Schramsberg’s is a crisp, explosively effervescent working that brings a bit more yeasty richness into play in the mouth. It is charged with plenty of brisk, palate-cleansing acidity but does not err to ungainly tartness, and while never too austere to be sipped on its own, it will make first-rate drinking with a platter of briny, fresh oysters.” – Points Connoisseurs’ Guide Region/Appellation: North CoastCountry Hierarchy: California, USAGrape/Blend: Chardonnay Cook’s Brut, California Reg. $7.95 | SALE $5.98 until Tuesday, January 3rd “Medium-dry with crisp fruit flavors.
